What for breakfast? Cornmeal muffins with courgettes /Šta za doručak? Projice sa sirom i tikvicama

Sometimes I have a favorite recipe that I make almost every day and then totally forget about it. That was the case with these cornmeal muffins – this was my go to snack or breakfast option for quite a while. Since having a toddler who, all of a sudden is not too keen on veggies I have recalled this little dish with sneaky addition of some finely grated courgettes. I have also recently upgraded my old recipe (found inspiration here), and must admit these savory muffins turn out so delicious – crunchy on the outside and moist inside.

Here is the recipe:

  • 3 medium eggs
  • 1 cup yogurt (Greek yogurt is ok)
  • 1/4 cup of vegetable oil (i have used olive oil)
  • tsp salt
  • 1 1/2 tsp baking powder
  • 6 tbsp flour
  • 7 tbsp instant polenta/cornmeal
  • 150 gr cottage cheese
  • 1/2 medium courgette (finely grated)

We baked them in a small muffin tray (you can also use bigger one) for 15 minutes on 180°C. Perfect with yogurt or fresh spring salad, as a weekend breakfast or part of picnic in the park/at the beach, now that spring has (sort of) arrived.

Često se dešava da imam omiljeni recept koji pravim skoro svakog dana, i onda, odjednom, potpuno zaboravim na njega. To je bio slučaj sa projom koja je bila omiljena opcija za užinu ili doručak. Otkad je dete, sve češće, počelo da izbegava povrće, prisetila sam se ovog brzog i jednostavnog recepta (i usput ga malo nadogradila – inspiracija). Uz dodatak tikvica, ovo postaje odlična, još ukusnija opcija i vi se osećate mnogo bolje jer ste opet uspeli da “provučete” povrće.

Trebaće vam:

  • 3 jaja
  • 1 šolja jogurta
  • 1/4 šolje ulja (ja sam koristila maslinovo)
  • kašičica soli
  • 1 1/2 kašičica praška za pecivo
  • 6 kašika brašna
  • 7 kašika kukuruznog griza
  • 150 gr mladog sira
  • pola srednje tikvice (fino narendane)

Mi smo ih pekli u malim kalupima za mafine oko 15 min na 180 °C. Odlične su uz jogurt ili svežu prolećnu salatu, kao doručak za vikend ili piknik u parku (sada kada je proleće uveliko tu).
